Remaining committed to the long-term development of hospitality education in Armenia, Green Rock will once again provide 10 scholarships to students enrolling at Apicius Armenia for the 2026–2027 academic year.
The scholarships are intended for young people who wish to pursue professional education in hospitality but may face financial barriers to accessing such opportunities. Through the programme, Green Rock aims to make education more accessible to young people and support their professional development.
International Hospitality Education in Dilijan
Opened in September 2025 in Dilijan, Apicius Armenia International School of Hospitality is the first international hospitality school in the region. It was established in collaboration with Apicius International School of Hospitality in Florence.
The school aims to create an educational environment in Armenia that meets international standards and to prepare highly qualified professionals for the hospitality and culinary industries. Green Rock’s scholarship programme is an important part of this mission. Through the school, Green Rock is contributing to the introduction of international educational practices in Armenia, the development of qualified hospitality professionals, and stronger connections between education and the hospitality industry.
From Dilijan to Florence
Apicius Armenia offers two-year educational programmes in two fields: Hospitality Management and Food, Wine & Wellness Studies. Students can begin their studies in Dilijan and, depending on their educational pathway, continue their second year in Florence or complete the full programme in Armenia. Throughout their studies, students earn an internationally recognised professional qualification. Graduates also have the opportunity to continue their education through bachelor’s degree programmes at the American University of Florence. The school’s educational approach is based on the principle of Experiential Learning. Students develop knowledge and professional skills not only through classroom instruction, but also through practical projects, hands-on assignments and experience in real-world working environments.
This approach enables students to gain practical experience while still studying and develop the professional skills required in today’s hospitality industry.
First-Year Results
Apicius Armenia’s first admissions cycle generated significant interest. In 2025, the school received 200 applications from Armenia and different countries around the world, including Lebanon, the United Arab Emirates, India, Bangladesh, Zimbabwe and others. During the 2025–2026 academic year, the school welcomed more than 20 students, most of whom received scholarships supported by the Green Rock Foundation. Following the completion of the first academic year, Green Rock continued to support selected students, enabling them to pursue their second year of studies in Florence. In this way, the scholarship programme can become the starting point of a comprehensive educational journey — from studying and gaining practical experience in Dilijan to international education and further professional development.
From Education to Career
The broader goal of Green Rock and Apicius Armenia is to create an environment that connects education with professional development and career opportunities. Students have the opportunity to relocate to Dilijan, receive an international hospitality education, gain practical experience, continue their studies abroad and subsequently begin their professional careers. Accommodation opportunities are also available to students as part of the programme. Upon graduation, students receive support in launching their professional careers and seeking employment through the school’s network of international partners and employers. The development of Apicius Armenia is part of Green Rock’s broader strategy to strengthen Armenia’s educational and professional potential in hospitality, bring international expertise to the local context, and prepare highly qualified professionals for the industry. Through this approach, Green Rock aims to build stronger connections between young professionals, educational institutions, and current and future employers in the hospitality sector. Green Rock plans to continue expanding educational and professional development opportunities, contributing to the growth and competitiveness of Armenia’s hospitality industry in line with international standards.

Apicius Armenia is currently accepting applications for the 2026–2027 academic year. The number of applications already received indicates that interest in the programmes is strong and competition is expected to remain high this year.
